Smartie Cookies
Serves: 12-14

  • 110g unsalted butter, at room temperature
  • 110g caster sugar
  • 110g soft light brown sugar
  • 1 egg, beaten
  • ½ tsp vanilla paste
  • 240g plain flour
  • 10g milk powder
  • ½ teaspoon bicarbonate of soda
  • ½ teaspoon baking powder
  • 150g smarties
Instructions
  1. Place the butter and sugars in the bowl of a stand mixer, or a large bowl if using a handheld mixer, and beat until sandy. With the mixer running, add a little egg at a time until fully combined before adding the vanilla paste.
  2. In a separate bowl, whisk together the flour, milk powder, bicarbonate and baking powders then add to the wet mix, keeping the mixer on low until fully combined. Fold in the smarties carefully (I find this easiest mixing by hand) then wrap the dough in cling film tightly. Chill for at least one hour before baking.
  3. Preheat the oven to 180oc/160oc fan and line two baking trays with baking parchment. Remove the dough from the fridge and roll into small balls about 60g in weight, making around 12 - 14 cookies. Space out evenly on the baking sheets and bake for 12-15 minutes until golden but still soft. Remove from the oven and cool for a few minutes before transferring to a wire rack to cool completely. Store in an airtight container for up to three days.
